Gio started in restaurant kitchens at twenty-one — washing dishes, then learning every station, then cooking for private tables and traveling retreats. Almost eight years later, the through-line is the same: feed people well, and feed them with intention.
His cooking is cultural fusion — woven from Mexican and Ethiopian traditions where nothing is wasted and flavor is built through time and natural processes — layered with foraged local ingredients and an Ayurvedic eye for balancing the six flavors.
